I enjoy the hunt itself, using the most appropriate weapon against each monster.
To me, it is like solving a puzzle, and each monster is a different puzzle, and each weapon is a different tool.
In other words, the monsters are like “locks” while the weapons are like “keys”. In this perspective, I enjoy finding and using the right “key” to unlock the correct “locks”.
I have also tried using just one weapon (Pukei-Pukei Bow for me) to defeat all monsters, which I will continue to do so as a challenge to myself. Otherwise, I enjoy observing and researching which weapon type is the best against the few monsters that I have difficulty hunting and adopt that weapon type against them.
Perhaps, you can consider me like a “roleplayer”, where I play the role of a hunter who uses the right tool for the right job, instead of using just the “hammer” and seeing everything as “nails”. Then, I hunt the monster like how I imagine they would be hunted if they were real monster in the real world.
